Prepare - cook - serve hot, all at the same time

1. Prepare - When workloads are low, the time can be spent much more profitably by preparing all the necessary ingredients in advance. This is the time to wash and chop vegetables, peel potatoes, prepare meat, all helping to minimize costs and increase productivity.

2. Cook - When cooking large volumes in your CONVOTHERM Combi, you can enjoy peace of mind. With the Advanced Closed System quality is assured through automatic moisture control, adjusted for the volume and type of food being cooked, meaning you can relax!

3. Chill - The pre-cooked food is chilled to +38 F (+3 C) quickly in a separate CONVOCHILL by Delfield Blast Chiller, safely stopping the cooking process eliminating any food safety issues.
In addition to safety, another advantage of this method is that vitamins and nutrients are preserved and all the foods retain their fresh flavor and color.

4. Plate - Time to do some creative arranging at your leisure. A Banquet Trolley can accommodate 20 to 122 plates, depending on size. One unbeatable benefit of the CONVOTHERM banqueting system is the generous spacing between shelves on the Banquet Trolley. This generous spacing between rings allows dishes to be piled up high in creative arrangements.

5. Cold Storage - When the Banquet Trolley is fully loaded, move it in the walk-in cooler. Your prepared dishes will stay fresh and crisp for up to 72 hours.

6. Retherm - The cold dishes are transported straight from the walk-in cooler to the CONVOTHERM Combi Oven Steamer on the Banquet Trolley. It couldn't be easier or more convenient. Eight minutes is all it takes to heat up to 122 plates with delicious food, all done to perfection. Thanks to the CONVOTHERM Advanced Closed System you won't find condensation on the plates, since the moisture is automatically and precisely controlled.

7. Hold - Roll the plated Banqueting Trolley into the CONVOHOLD Holding Cabinet to keep the dishes at serving temperatures.

8. Sauce - Garnishing and the final creative touches can all be achieved at the serving point by a small team. More time for what you do best: Create!

9. Serve - You can now serve every dish demonstrating consistent quality, everything piping hot and absolutely perfect.
